Ways we serve

Menus for every kind of evening.

Most of our menus mix live stations and a buffet. Some evenings call for something else.

  • Sitdown Restaurant

Pre-plated, restaurant-style courses served within the event: Modern Indian, Modern European, Modern Japanese Fusion and Tokyo teppanyaki.

  • Flying Kitchen

A curated dinner of pre-plated pass-arounds, then a plated main course and a dessert course to finish.

  • Satvik Bhoj

Traditional India, all vegetarian: a Banaras kulhad and thandai bar, then the Great Indian Culinary Trail of chaat lanes from Banaras, Agra, Indore and Ambala.

  • Chai Adda

A late-night station for chai, coffee, bun maska and sandwiches, under string lights with kulhads.

  • Carnival

A fairground menu: fresh juices, a burrata bar, chaat from the Chakori lanes, Rajasthani and Agra specials, and the sweets everyone loves.

Every menu arrives printed in one of our house styles: Palette Studio, Spice Stories or Editorial. Pure Jain options on request.
